This breakfast sandwich is incredible easy to make and it tastes great. You can make this in the mornings before school or pre-make a week’s worth and warm them up before you head out the door!

Ingredients

  • fresh baby spinach
  • 1 egg
  • chopped onion
  • 1 english muffin (toasted)
  • shredded cheese (try pepper jack for extra spice!)
  • salt + pepper
  • cooking spray

sauté the onions and spinach until the spinach is slightly wilted and the onions are translucent.

Add the cheese and stir until slightly melted

Add your egg, and scramble all together

Add salt and pepper to taste.

Add your spinach and egg to the top of your english muffin and place the other half on the top to complete your sandwich.

And you’re done! So easy and delicious. I like to cut up some fruit to eat on the side as well.

Simple Meals | Spinach Pasta with Pesto

This recipe is super easy and delicious. It’s a pasta casserole that is perfect for staying warm and snuggly during these winter months. This dish is great for an easy date night dinner or perfect for lunch time leftovers. Yum!

I found this recipe on thkitchn.com and made a few changes to better suit my taste.

8 ounces spinach pasta (I like linguine!)
6 ounces fresh baby spinach, roughly chopped
2 large shallots, peeled and thinly sliced
4 cloves garlic, minced
2 ounces Asiago cheese, grated
1/2 cup low-fat Greek yogurt
1/2 cup half and half
6 ounces basil pesto
Freshly ground black pepper
2 large eggs
Olive oil

Pre-heat your oven to 350 degrees. 

Boil 4-6 quarts of lightly salted water in a large pot and cook the pasta according to the package.

Set cooked pasta aside.

Peel, wash, and thinly slice the shallots.

Roughly chop the baby spinach

Mince garlic

Grate the cheese

In a large bowl, combine the half and half, basil pesto, eggs, and greek yogurt. Wisk together until smooth.muffinchanel vegetarian spinach pasta pesto simple meals quick easy sauce

Let cool for about 10 minutes. Serve and enjoy!

I’m a little late to the party — I think this album came out sometime late last year — but I’m here now!

I first listened to the album on YouTube and then forgot about it, until recently. I’ve been listening to it a lot lately; the songs are catchy and fun.

  • Game of Thrones

After I saw the first season, I hated this show! How dare they kill off a main character!! Not much has changed….but I like the show a little bit better. I’m rooting for the Khaleesi to reclaim her throne!

I first heard of this deodorant from neo-reality.com. It prevents sweat and odors and it’s natural, what more could you ask for? This deodorant is vegan and certified organic so you don’t have to worry about chemicals and carcinogens seeping into your skin. Very happy with this purchase.

  • Pedicures (Clambake by Essie)

My mom and I recently went out for a birthday pedicure! I used Clambake by Essie because it’s so fun and it’s the perfect balance between red and orange.essie_clambake

Pedicures are a great way to relax and pamper yourself. Especially during summer, when you’ll likely be wearing flip flops, nothing can make you feel a little happier than looking at freshly pedicured toes.

I got these two, Pomegranate and Jasmine, for my birthday and they are both awesome! These lip butters are so smooth and make my lips feel soft and hydrated. Some of the colors are bright, but the results are mostly sheer with a hint of color. Perfect for every day and definitely one of my all time favorite lip products.

All the best players all on one stage for two weeks of fun. Tennis is such a cool sport because it’s just you against your opponent — no teams, no blaming others. They’re doing some intense stuff as athletes, from sprinting to strategy. What a great game!

Spinach Quiche!

I love this spinach quiche; it tastes great and it’s easy to make.

What you need:

  • 3 egg whites
  • 1lb shredded swiss cheese
  • 1 white onion – diced
  • 3 tblspns heavy whipping cream
  • 2 deep dish pie crusts
  • 1 lb spicy turkey sausage – ground
  • Stouffer’s – spinach soufflé
  • tobasco – to taste

Directions:

  • Cook sausage in a frying pan and grind in a food chopper. I use a Kitchen Aid one that’s perfect.
  • Defrost the spinach soufflé in microwave – or leave in refrigerator overnight.

Combine shredded swiss cheese, ground sausage, diced onion, defrosted spinach soufflé, and heavy whipping cream in large bowl. Mix with spoon until completely mixed. Fold in three egg whites and pour mixture into pie shells.

Bake at 375 degrees for 60 – 70 minutes. Let cool and enjoy!
